We are always searching for new and interesting ways to explore with tea-related recipes and we found a really pretty one today, a tea Posset.

Iron Goddess Tea Honey Posset

What is a posset? 
The word have evolved through history and mainly used today for a chilled creamy mousse or custard-like textured dessert. Tracing back its history, a posset was actually a British hot drink of milk curdled with wine or ale, often spiced, which was popular from medieval times to the 19th century.  In the Middle Ages, it was used as a cold and flu remedy and was more of a drink than a mousse.

What we have today is the modern dessert version infused with very own iron goddess tea. We used No 1, Light Fresh Scent, in our range for in this recipe. The tea flavour complements the sweet and creamy ingredients, resulting in a delicate and delightful treat. Read below for the recipe and feel free to try with other flavours or spices, it's a simple and versatile recipe, great for any occasions!

Makes 3-4 servings.

Ingredients:
2 cups cream (heavy or regular whipping cream both work)
1/4 cup honey
2 1/2 tbsp lemon juice
1/2 tsp lime juice
7g of 1 pack Iron Goddess tea (No 1, light fresh scent)

Instructions:
Open 1 pack of Iron Goddess tea and put the tea leaves in a infuser, rinse the tea in boiling water to loosen the leaves, drain and set aside.

In a medium saucepan bring cream and honey to boil over medium-high heat. Stir continually until honey is fully combined. Boil for 3 full minutes stirring continually. You may need to lower heat to prevent boiling over. Remove from stovetop.
Add lemon and lime juice and stir.

Submerge the tea leaves and infuser into the saucepan and allow to steep for 30 minutes (to intensity of flavor desired). 

Remove tea leaves and infuser, pour into ramekins.

Cover tightly with plastic wrap and chill, minimum of 2 hours or let the flavours set in overnight.
